Omelet in a Mug

Ingredients:
2 large eggs
1 Tbsp. milk or water
Toppings (optional):
Shredded cheese
Chopped onion
Chopped bell pepper
Crumbled bacon, sausage or chopped ham
Salt and pepper, to taste
Directions:
1. Spray a large mug with nonstick cooking spray. Crack eggs into mug. Add milk; beat with fork until well mixed.
2. Microwave 1 minute. Sprinkle with desired toppings. Microwave 30-60 seconds or until egg is cooked through. Season with salt and pepper, if desired. Serve and enjoy.
Peanut Butter Mug Cake

Ingredients:
2 Tbsp. whole wheat pastry flour
½ tsp. baking powder
1 egg
1 ½ Tbsp. canola oil
2 Tbsp. milk
1 tsp. vanilla
2 Tbsp. maple syrup
2 Tbsp. peanut butter
Mini dark chocolate chips
Directions:
1.In a small bowl, whisk together flour and baking powder. Whisk in the rest of the ingredients (except chocolate chips) until well-combined.
2.Pour mixture into a large mug, or two smaller mugs, and top with chocolate chips.
3.Microwave on full power for 2-3 minutes. Allow to cool slightly before serving.
Mac and Cheese in a Mug

Ingredients:
½ cup whole grain elbow macaroni noodles
½ cup milk
¼ cup broccoli, finely chopped
½ Tbsp. garlic powder
½ cup finely shredded cheddar cheese
Directions:
1. Add noodles, milk, broccoli and garlic powder to an oversized mug. Place mug on a large, microwave-safe plate and microwave for one minute; stir; microwave an additional minute and stir again. Continue to microwave and stir in 30 second increments until noodles are cooked.
2. Immediately add cheese and stir until it completely coats the noodles. Finely shredded cheese should melt right away. For thicker shredded cheese, microwave an additional 20 seconds to melt cheese. Serve and enjoy immediately.
