This cheese from the western, French-speaking part of Switzerland has a fine, unmistakable taste. It has been produced since at least the year 1115 in the surroundings of the ancient town of Gruyères and is produced to this day according to the traditional recipe in the cheese dairies of western Switzerland. Le Gruyère owes its fine and typical taste to the top-class raw milk from which it is made.
